Linza is a delicious oriental dessert famous in the Egyptian city of Damietta. It is a mix of cake and Basbousa (semolina cake), and it consists of very simple ingredients that are available in every house pantry; such as flour, butter and shredded coconut with no need for baking powder.

Semolina Cake (Basbousa)

Ingredients:
2 1/2 cups of Semolina
3/4 sugar
1/4 cup shredded coconut
1/2 cup melted ghee
3/4 cup yogurt or water
1/2 teaspoon Baking Soda
1/4 cup thick sugar syrup or white honey
1 liter sugar syrup ( 2 cups of sugar & 2 cups)
Whole Hazelnuts for decoration
Directions:
preheat oven to 170 degrees.
mix together Semolina and coconut with baking soda .
Mix sugar & yogurt( or water ) with the melted ghee and the thick syrup, mix very well until combined.
Add the Semolina mix and fold gently.
Prepare the baking dish by rubbing it with butter .
Pour the mixture and fix the face with your wet hands.
Decorate the surface with hazelnut as preferred.
Prepare the syrup by mixing 2 cups of water with 2 cups of sugar . Boil until it thickens , Add a squeeze of a lemon and keep aside.
Bake until golden .
When it is still hot pour in the hot sugar syrup and let it absorb, cool down before serving.

المقادير:
2كوب ونصف دقيق سمولينا
3/4 سكر
1/4كوب جوز الهند
1/2كوب سمنة سايحة
3/4كوب لبن أو ماء
نصف معلقة بيكنج بودر
1/4كوب شربات تقيل أو عسل أبيض
1لتر شربات خفيف(2كوب سكر+2كوب ماء ولما يغلى نضيف عصرة ليمون)

الطريقة:
1-نضع الدقيق مع جوزالهند و البيكنج بودر وأقلبهم
2-اضع السكر مع اللبن مع السمنة السايحة والشربات التقيل أو العسل واقلبهم مع بعض
3-ثم اخلط الخليط الجاف على الخليط السائل وأقلبهم مرتين
4-أضعهم فى صينية مدهونة بالزيدة وأساويها باليد وتكون مبللة بالماء وما اضغطش عليها
ونضيف على الوش بندق
5-أدخلها الفرن على درجة حرارة 170 لمدة تلت ساعةحتى يصير لونها ذهبى وممكن تحمرى الوش تحت الشواية
6-وعندما تخرج أسقيها بالشربات الخفيف الساخن
